Milk Bar is a famous bakery chain started by renowned chef Christina Tosi with a reputation for killer cookies. A Milk Bar cookie is known for being familiar yet unexpected and this copycat for their popular cornflake cookie is no exception to that rule. 

This Milk Bar cornflake cookie recipe is the perfect twist on a classic chocolate chip cookie. It starts off simple with a classic vanilla cookie base, but then things get deliciously interesting. We throw in frosted flakes to give the cookie extra sweetness and an ultra crispy texture. Be warned, this is a crispy cookie through and through. But in the best possible way imaginable – a buttery crisp that melts in your mouth. Mmm, you’re going to love it! Cornflake Cookies Recipe Ingredients

  • Butter – I always use salted butter, but if you only have unsalted add an extra pinch of salt to the dough. 
  • Brown Sugar – Equal parts brown and granulated sugars to give this cookie its iconic flavor and texture. 
  • Granulated Sugar 
  • Egg 
  • Vanilla 
  • All Purpose Flour 
  • Cornstarch – The addition of cornstarch to this recipe makes it so you don’t have to buy cake flour. You’re welcome! 
  • Baking Soda – this helps the cookies spread and gives them the crunchy, golden brown exterior. 
  • Salt 
  • Mini Chocolate Chips – This is what Milk Bar uses. 
  • Frosted Flakes – Again, this is what Milk Bar uses and we do what they say.

How to make Cornflake Cookies at home

  1. Prep by preheating the oven to 300° F. Line a cookie sheet with parchment paper or a silicone liner and set aside.
  2. In the bowl of a stand mixer or with an electric hand mixer, cream together the butter, brown sugar and granulated sugar until light in color and fluffy in texture. This should take about 2-3 minutes. 
  3. Add in the egg and vanilla,  then mix until combined.
  4. Next, add the flour, cornstarch, baking soda and salt. Mix until fully incorporated.
  5. Finally, add in the chocolate chips and Frosted Flakes and mix until evenly distributed.
  6. Using a #40 cookie scoop, portion out the dough into equal 1 1/2 tbsp dough balls and arrange them on your cookie sheet. The cookies will flatten and spread, so I typically do not place more than 12 cookies max on each cookie sheet.
  7. Bake at 300° for 15-17 minutes or until the Milk Bar cookies have flattened and the edges are turning golden brown.
  8. When the cookies are ready, remove them from the oven and allow them to cool on the pan.
  9. Enjoy!
