Christmas Birthday Cake Cookies 

This is a copycat Crumbl birthday cake cookie, but tiny and super festive! It’s a thick cake batter sugar cookie that’s filled with sprinkles and topped with a swirl of cake batter cream cheese frosting and more festive sprinkles.

Christmas Cake Batter Cookies

These cake batter cookies are the perfect addition for your Christmas cookie trays this year! The thick and chewy sugar cookie base is infused with cake batter flavoring and tons of merry sprinkles. On top you’ll find a velvety smooth cream cheese cake batter frosting that is absolutely divine. Top it off with even more festive sprinkles and you’ve got a cookie worthy of rockin’ around the Christmas tree.

Ingredients

  • Salted butter, softened – I always use salted butter! You can use unsalted butter, you will just need to add an extra pinch of salt to the dough. 
  • Granulated sugar 
  • 1 Egg + 1 Egg yolk – Adding the extra egg yolk makes this cookie chewier and richer! 
  • Cake batter flavoring – This is the star of the show here, so do not skip it! It is what makes or breaks these cookies. 
  • All-purpose flour
  • Baking powder
  • Christmas sprinkles – You can make your own sprinkle mixes by getting sprinkles from the bakery at your local grocery store! 

Frosting:

  • Cream cheese, room temperature – You need to use the stick cream cheese. Not the spreadable, made-for-bagels tub kind. 
  • Salted butter, room temperature
  • Powdered sugar
  • Cake batter flavoring – Again, this is imperative to getting these cookies to actually taste like a delicious birthday cake. 
  • Milk, if needed
  • Christmas Sprinkles

How to Make Birthday Cake Cookies

  1. Preheat the oven to 350°F (180°C). Line a cookie sheet with a silicone baking mat or parchment paper. Set aside. 
  2. In a bowl, cream together the butter and sugar until light and fluffy. It typically takes about 2 minutes. 
  3. Next, add in the eggs and cake batter flavoring. Once mixed, add in the flour,  baking powder and sprinkles. Mix until thoroughly combined.
  4. Divide the dough into 1 ½ Tbsp portions, roll into a ball and flatten slightly before arranging on the prepared cookie sheet.
  5. Bake for 9-11 minutes or until the centers of the cookies have puffed up and are no longer glossy.
  6. While the cookies are cooling, make the frosting, by whipping the butter and cream cheese until smooth.
  7. Add the powdered sugar, one cup at a time, mixing each time until it is fully incorporated.
  8. Add in the cake batter flavoring and mix to incorporate. Add milk a tsp at a time until you’ve reached your desired consistency, if needed.
  9. Add the frosting to a piping bag fit with a round piping tip. Pipe on the cookie in a spiral, starting in the center and working your way out.
  10. Sprinkle some extra sprinkles on top and serve warm.

  • Piping tips – This is a set of my 4 favorite piping tips. For this cookie you will use the round tip.
  • Cookie Sheet – These cookie sheets have put in WORK in my kitchen. If you’re looking for a brand that will stand the test of time (and cookies), this is my recommendation. 
  • Silicone baking mat – I love using this or parchment paper to line my cookie sheets to make it easy-peasy to get cookies off of the pan without sticking. 

Cookie storage

Store these cookies in an airtight container at room temperature for up to 3-5 days. Serve warm!
