Bar Cookies from a Cake Mix

If you’ve been following me for any amount of time, you know my love for Cake Mix cookies runs deep. So it’s only natural that that love would extend to cake mix cookie bars. Just as versatile but somehow easier than their cookie counterpart, these cookie bars from a cake mix are about to revolutionize the way you think about quick and easy desserts. 

Making bar cookies from a cake mix is a super simple way to make a delicious dessert for a crowd. And because cake mix flavors are pretty much endless, you have hundreds of easy dessert options at your fingertips! What You’ll Need to Make Cake Mix Cookie Bars

  • Salted butter – This recipe has a few more ingredients than most cake mix bar recipes, but trust me the extra step of creaming the butter with a little sugar really makes all the difference!! We want cookie texture here, not cake texture!
  • Granulated sugar
  • Eggs
  • vanilla extract – Don’t feel tied to vanilla here! Feel free to switch up extracts and try something different – almond or even cake batter extract would be SO good. 
  • Yellow cake mix – You could make these with any cake mix flavor and you could use any add-ins your heart desires. It’s seriously the best recipe. 
  • All-purpose flour
  • Chocolate chips

Instructions for Cake Mix Cookie Bars

  1. Prep by preheating the oven to 350° F and lining a 9×9 pan with parchment paper (set aside).
  2. In the bowl of a stand mixer or with an electric hand mixer, cream together the butter and granulated sugar.
  3. Add the eggs and vanilla, mixing until well combined.
  4. Add the yellow cake mix and flour to the bowl and mix until a soft dough forms.
  5. Mix in the chocolate chips until evenly distributed.
  6. Lightly press the dough into your prepared baking pan, leaving the tops rough for the finished texture.
  7. Bake at 350° F for 25-30 minutes, the edges and top will start to turn golden brown when they are ready to come out of the oven. 
  8. Allow the bars to cool in the pan. 
  9. Cut & enjoy!

Can I freeze cake mix bar cookies for later?

Absolutely you can! Cut the cookie bars into squares and let them cool. Once cooled, place the bars in a resealable freezer bag labeled with the date and type of cookie bar. Place cookie bars in the bag (you can even separate layers with parchment paper if desired) and put the bag in the freezer. They will stay good for up to 3 months! What variations can I try with cake mix bar cookies?

There are limitless variations for these cake mix bar cookies! I recommend going to the grocery store and selecting whatever cake mix appeals to you. Then check out the rest of the baking aisle/candy aisle to choose what add-ins you think would go well with the mix! Your opportunities for yummy cookie bars are really only limited by your creativity here. But in case you’re looking for something more specific, here are a few of my favorite combos: 

  • Red velvet cake mix + white chocolate chips 
  • Devil’s food cake mix + chocolate chips (or mint chocolate chips, or caramel chips, or peanut butter chips, heath bits, mint chips, etc. etc.) 
  • Strawberry cake mix + strawberry extract + white chocolate chips 
  • Carrot cake mix + white chocolate chips + pecans 
  • Funfetti cake mix + extra sprinkles 
  • Lemon cake mix + white chocolate chips 
  • White cake mix + mini m&m’s 

Really, you cannot go wrong!

  • 1 15.5 oz box (432g) yellow cake mix
  • 3/4 cup (115g) all-purpose flour
  • 1 1/2 cups chocolate chips
