Preheat the oven to 350° F.
Cut each croissant in half, lengthwise, leaving one side connected.
Divide the cookie dough into 8 equal size pieces.
Take one portion of dough and stuff it into the inside of a croissant. Repeat with the remaining croissants, replacing the tops of the croissants after the cookie dough has been placed inside.
Top each croissant with another portion of cookie dough.
Bake at 350° F for 10-15 minutes or until golden brown.
