I was a little nervous after reading the comments, but these cookies turned out absolutely perfect! The texture and taste are exactly what I was hoping for. I live at elevation in a very dry climate and I did not have to make any adjustments to the recipe. I wasn’t able to find butter extract so I used high quality salted butter and a little extra vanilla. Thank you so much for sharing this recipe! This will definitely be added to my rotation 🙂

These were perfectly soft and chewy. I was wondering if these would work well for ice cream cookie sandwiches? They seem like the perfect texture.

In reply to Becky. Yes, you can refrigerate this dough! You can let them come up to room temperature and bake as normal or put them in the oven straight from the fridge and add an extra minute to baking time.

Can I roll them into balls and refrigerate the dough for a couple of days? Would I need to get them to room temperature before baking.

YUM!!! I’ve never had the Costco version of these cookies so I can’t say how similar they are, but these were absolutely delicious and so very easy. Mine turned out a bit flatter than in the photo but they are perfectly chewy. 8 minutes was exactly right for me. Thank you for such a fun and simple cookie recipe!
