Preheat the oven to 325° F.
In the bowl of a stand mixer, cream together the butter, brown sugar and granulated sugar. Mixing until well combined, light in color and fluffy in texture.
Scrape the sides of the bowl and add in the egg and vanilla. Mix until combined.
Add the flour, baking soda and salt. Mix until a soft dough forms.
Add in the chocolate chips, mixing until evenly distributed.
Lightly press the cookie dough into a 12 inch cast iron skillet (or another oven safe skillet).
Bake at 325° F for 32-37 minutes (mine took exactly 35 min). The cookie dough will rise up in the pan and the top will become golden brown.
Allow the skillet to cool for 5 minutes before topping with a generous portion of ice cream, chocolate sauce, whipped cream and anything else you can think of!
