Mini Costco Chocolate Chip Cookie Recipe

Everybody loves the Mini Costco Chocolate Chip Cookies! I created this copycat recipe so you can make as many as you want, right from your own kitchen. Trust me, they taste identical!

Ingredients

  • 1/2 cup salted butter softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 1/4 cup light corn syrup
  • 1/2 tbsp molasses
  • 1/2 tsp vanilla extract
  • 1 3/4 cup all purpose flour
  • 1/4 tsp salt
  • 1/4 tsp baking soda
  • 1 cup mini chocolate chips

Instructions

  • Preheat your oven to 350°F.
  • Using either a stand mixer or an electric hand mixer, cream together the butter, brown sugar and granulated sugar until light in color and fluffy in texture.
  • Scrape the sides of the bowl and add in the egg, corn syrup, molasses and vanilla extract. Mix until well combined.
  • Add in the flour, salt and baking soda. Mix until a sticky dough forms.
  • Stir in the mini chocolate chips.
  • Portion out your dough into small, 1 tbsp portions. Roll into a ball and arrange on your cookie sheet.
  • Bake at 350° F for 7-9 minutes. The cookies will spread and the edges will start to turn golden brown when they are ready to come out of the oven.
  • Allow the cookies to cool on the pan before transferring to a wire rack.
  • To get the soft edge that Costco cookies are known for, store the cookies in an air tight container over night. The edges will soften as they sit, right out of the oven they are more buttery crisp.
