Hi! If you're looking for a good giant sugar cookie recipe, I recommend this one (you can make it with or without the caramel frosting): https://cookiesfordays.com/twisted-sugar-salted-caramel-sugar-cookie/.
I have not tried making these cookies with just egg yolks, but you can give it a go! It will likely make the cookie a little chewier because of the fat content of the yolk. If you don't want to bother with the eggs, I like using cream cheese as an egg substitute in baking! You will use 1/4 cup or 2oz of cream cheese per 1 egg.

Two questions please: 1) Have you created a copycat recipe for the Great Harvest giant 5" vanilla sugar cookies...or perhaps does one of your existing sugar cookie recipes come close? They are so thick and soft in the middle.
2) I am allergic to egg whites. But some sugar cookie recipes use yolks only, which is great for me. How would that affect the end result in a recipe that actually calls for a whole egg? Would I use two yolks to replace a whole egg?

These are the best! I made them smaller and then I made them with 1/4 cup scoop. The bigger was so much better. It’s not worth it making them smaller. For some reason bigger just tastes better!!!

I worked there in my 20s, we didn't use milk at all and did use vanilla. I'm kicking my 20 yo self for not writing it down! The ratio is very close though. I made them tonight and will try more butter to sugar bc they were on the sweeter side and I remember them being the perfect balance of salty/ sweet. We used a " saltmix " too with a 2:1 ratio of salt, BS to powder so - 1t salt,1t b.soda,1/2t b.powder. I'll increase those ingredients too. thank you! this is the closest to their cookies yet.
