make the dough balls, and stick in freezer, while waiting for the batch in the oven to finish baking. will keep them from spreading out to thin, and will have a chewy center.
I also double the receipe, but add another bag of chocolate chips

I would recommend if you do metric to use closer to 145g per cup of flour instead of the typical 120/125g.
My family loved them.

I just made 130 4 oz cookies (10 cookies per batch) as Thank you’s for my daughter’s wedding. They were apparently AMAZING because the compliments keep coming! I did make the toffee also!

Just a heads up to other users – if you adjust the quantity of the recipe, the weight measurements do NOT adjust. I usually weigh my flour and looked at the total for 36 cookies and thought “That CANNOT be correct!” So I came back to double check (making these today for a bbq) and realized while the non-weight measurements adjust as you change the quantity (ie 1 egg changes to 2 for 12 vs 24 cookies) the weight measurement (eg 2 cups (304g) all-purpose flour for 12 cookies vs 4 cups (304g) all-purpose flour).
